We are looking for a highly skilled and motivated Jnr Sous Chef to join our team! The Jnr Sous Chef is responsible for the day-to-day running of the kitchen and will work closely with the head chef to ensure that all food prep and recipes are compliant with company standards. We need someone who is extremely detail oriented, a great leader, and wants to make a difference.
Key Duties & Responsibilities
All sections Hotel & Catering Kitchen
Assume the Sous Chefs responsibilities in their absence.
Expectations
Produces and maintains the highest food quality and control for all food products served.
Assist the head & sous chef with on-going training and that the high standards set by the Executive Chef are followed.
Will work closely with the Head & sous chef to accomplish tasks related to Inventory, Equipment control and maintenance,
Assist the head & sous chef all Health & Safety & Food Safety Policies and procedures are embedded ensuring the relevant training is delivered.
Will oversee the ordering process ensuring proper usage of ingredients, stock control and reduction of food waste ensuring the targeted cost of sale is achieved.
Ensure the agreed Recipe specks are followed through by the CDP’s and commis.
Assist the head & sous chef when reviewing recipe specks ensuring alterations are sent to the Executive Chef for review.
Ensure the recipe specks, allergens and costings are reviewed for the relevant Restaurant and any alterations must be sent to the Head & Executive Chef for review.
Must be knowledgeable with the established quality standards and Company Policies to supervise his or her subordinates.
Will assist in give proper training to the new team members and follow up on their progress.
Responsible for maintaining the quality and consistency in taste per recipes and photos as per the company specifications.
Communicates daily with the team to utilize perishable food items in due course. Check on the coolers in general to avoid shortages.
Monitor the food production and record wastage using the provided forms.
Must have complete knowledge of the food safety management system and ensure it is followed throughout the entire operation daily.
Ensure that the kitchen cleaning schedule set up by the Executive Chef is followed by everyone after each service and exercising proper methods to prevent equipment damages.
Responsible for the control and maintenance of all equipment distributed to the cooks that need to be cleaned and sanitized after each service.
Responsible for the control and maintenance of all kitchen equipment reporting any damages or malfunctions ensuring the necessary follow up.
Ensures that all kitchen team are in proper, well-maintained uniforms, with special attention to those working in public areas. Personal appearance and hygiene must be as per Company policy.
Ensure that the kitchen is ready for any announced or unannounced inspections, done either by the Environmental Health officer or the internal Food safety officer.
Oversee the preparation, presentation and is physically present during service.
Must ensure the HACCP program is carried out correctly.
